Daddy's belated birthday cake

Since Daddy spent his birthday with colleagues in rain-soaked San Francisco, we didn't really get to celebrate with him.  We made up for that tonight with a pretty serious cake.  I found this recipe a while back and Tom really wanted to try it.  It called for a cake mix and "whipped topping", which wouldn't do.  I made an apple cake I've made before, but upped the spice.  Then we made a caramel mousse with cream cheese, caramel and whipped cream (the real stuff).

After it was all assembled, Tom put pecans on most of it but left some plain for the kids.

 We sang "happy birthday".
And he blew out the candles.

Here you can see the yummy cake with mousse in the middle and on top with extra caramel sauce on top as well.

It is so rich and delicious.  The kids didn't like it, which reminded Leo how he didn't like last year's cake either.  He asked Tom why he picks bad cakes for his birthday but we told him that it's just a grown up thing.
